Roasted Lemon Herb Chicken
Makes 4 servings.
Ingredients:
Juice and zest from 2 lemons
2 cloves garlic, minced
⅓ cup olive oil
1 tbsp. chopped rosemary
1 tbsp chopped thyme
4 chicken thighs (breasts or drumsticks can be substituted)
Salt & Pepper to taste
Directions:
Preheat oven to 375 degrees.
Whisk together all ingredients but the chicken in a bowl.
Lay chicken flat in a dish, pour marinade over, and allow to sit for at least 1 hour.
Roast in oven for 35-40 minutes, or until internal temperature reaches 165 and the chicken skin is crispy and brown.
