Turkey Larb
Ingredients:
1 lb ground turkey
½ red onion, diced
2 cloves garlic, minced
2 tbsp avocado or vegetable oil
1 chili chopped (serrano, jalapeno or thai chili)
1 tbsp fish sauce
Juice of 3-4 limes depending on taste, plus 1 lime cut in wedges
1-2 tsp sriracha sauce
¼ cup chopped cilantro
¼ cup chopped mint
¼ cup chopped toasted peanuts * optional
¼ wedge cabbage or one head of butter leaf lettuce
Directions:
In a pan, lightly saute onion, garlic, and chili in oil for 2 minutes. Add ground turkey to pan and cook through.
In a small bowl, combine fish sauce, lime juice, and sriracha. Pour over turkey mixture and continue cooking for 5 more minutes
Remove from heat, serve in a cabbage or lettuce cup, topped with chopped cilantro, mint, peanuts, and lime wedge
